Over five years partnering with the NSW Government, Retail Strategy Group helped shape the new Sydney Fish Market as a hospitality destination of international significance. Our role was to bring together more than 20 of the country’s leading chefs, hospitality groups and dining concepts, celebrating Australia’s food culture alongside the market’s iconic seafood offer.

The New Sydney Fish Market is one of the most significant civic and hospitality projects ever undertaken in Australia. Delivered by Infrastructure NSW and the Sydney Fish Market, the project reimagines a beloved Sydney institution as a world-class waterfront market at Blackwattle Bay. As the largest fish market in the Southern Hemisphere and expected to attract more than six million visitors each year, the development combines a working fishing port, wholesale auction hall and vibrant public market to create a new destination on Sydney Harbour.
Over a five-year engagement working with Infrastructure NSW and the Sydney Fish Market, we collaborated on shaping the market vision and retail strategy for the precinct. The ambition was to create the country’s most significant food and hospitality destination, transforming the market into a place where the seafood industry, public life and hospitality culture come together in a single civic experience.
Our role focused on bringing cafes, bars, restaurants and unique retail concepts to the market, to complement the existing network of seafood wholesalers. Working alongside government, producers and industry leaders, we brought together some of Australia’s finest chefs and hospitality groups to showcase the best of the nation’s food and drink culture. Rising beneath its iconic floating roof on the edge of Blackwattle Bay, the New Sydney Fish Market has already become one of Sydney’s defining waterfront destinations.
